Are you a chef or a foodie who loves to cook and is up for the delightful challenge of working your magic at the Boardwalk deck on Lund Harbour one Wednesday this summer ?
We’ve been offered this opportunity once a week, as the Boardwalk closes every Wednesday to give their staff a deserved night of rest.
This stunning location has a lovely deck overlooking the harbour and room for you and your creativity assuming this challenge calls to you.
If you were to present your fixed price menu to 30 to 50 people, what would you create ?

Lund is the end of the road in paradise, access to Desolation Sound and the Salsih Sea. If you’re local to qathet all the better, and if you’re in BC looking for a fun night of culinary sharing that too can work.

Waterzooi ~ mussels marinière soup with celery carrots onions cooked in white Belgian beer

Flemish Carbonade ~ beef stewed in Belgian beers (dark & fruit) with Pat’s farm smoked bacon, onions, mustard and pain d’épice (spiced honey bread contains gluten), served with Belgian Fries
Paired with Townsite Brewing Tin Hat IPA *
Endive Salad with local blueberries
Speculoos and Stout Ice Cream ~ served with a fruit beer sabayon, contains eggs, dairy, wheat, dark Belgian chocolate and spices

Friday April 1st ~ Nico's Classic Belgium 3 Course Menu
One night only, April 1st at 5pm or 7.15pm at the Boardwalk in Lund.
Chef Nico presents 3 course cooked in and paired with local Townsite Belgium Beers.
It’s a tradition in Belgium to cook dishes in beer, the flavours often subtle adding a certain richness to the meal.
How lucky to have a Belgium brewmaster and brewery close at hand. Nico hails from Brussels now settled in Lund with Esther and young son building their home in the forest.
Join us for his special presentation on April 1st, this is a no-fools menu !
Unfortunately this menu does now allow for substitutes, it is not vegetarian and does contain dairy, gluten and beer.

The Pop-up Concept
Foodies love foodies… makers need tasters as much as eaters need chefs…
Come taste the talent in our community, good food created by local foodies for local foodies and friends, not necessarily professional chefs.
Here in Lund a closed restaurant offered their space allowing the Italian Peasant pop-up to feed 27 friends and neighbours in January.
Now offering a pop-up once a month at the Boardwalk in Lund.
Other venues are possible too, the venue does not have to be a restaurant. It could be a field or barn, it could be anywhere.
Usually by suggested donation, we price the menu to cover costs, and maybe contribute to a local cause, paying the chef and support team, sharing any profit between those doing the work, the host establishment and the cause.
There may be occasion where we have to cancel or reschedule if not enough seats are filled.
We support local farmers and growers as much as possible, and contribute the building fund for our village community centre to expand the community kitchen, so we can put more delicious fresh local food in local people’s bellies.

Our Lund Hosts, The Boardwalk Restaurant on the water's edge
Known for their spectacular location, endless sunsets and fish an chips.
Who wouldn’t want to enjoy a relaxed meal with this view.
Such a treat to sit overlooking the water and harbour enjoying great food year round, enjoying the harbour, wildlife and tranquility of this marvellous community.
Owners Rayana and Roy are such community minded folks, they’ve embraced our simple proposition of local foodies cooking for friends and neighbours.
Although initially conceived during lockdown as a way to reconnect and eat out, we’re happy to say they’ve agreed to continue with a night or two a month as it’s fun, allowing them a rare day off.
Thank you both for your kindness, encouragement and guidance in enabling Dinner with Friends, our Lund pop-up in your wonderful location.
A true mark of community supporting a good idea, and helping bring it to life.

Our Cause : The Community Kitchen Upgrade for the Lund Community Centre
Most Lundies know that our Lund Community Society (LCS) is working with qathet Regional District (qRD) on a new building to expand the community centre on Larson Rd.
A combination of new building to replace the Old Lund Hall with gym/theatre/multi-purpose space, and an upgrade to the commercial kitchen in the current building the old school and NSRC, North Side Recreation Centre.
In the image, 1 trough 5 are the new building and 6 is the kitchen expansion in the existing building.
The kitchen upgrade will allow local producers to preserve food, and prepare dishes for the wider community. The new building budget includes the physical upgrade, yet funds are needed to equip it fully to meet the diverse needs of local growers and makers and creative foodies.
You do not have to join us for dinner to donate, and each of our pop-up dinners encourages a donation, with any profits from the event shared with this LCS kitchen upgrade.

Thank You Chef Ermen The Italian Peasant Our First Lund Pop-up Valentines 2022
Meet Ermen continuing the family tradition of feeding family fresh and local food, just as grandma and great-grandma taught her.
As our first guest chef, Ermen has sent a high standard for others to follow. We hope you’ll return again as long summer nights roll around with delicious lingering sunsets on the deck.
Ermen DelliCarpini is a fresh Lundie from Long Island, NY (Shinnecock and Lenape territory) and is of Italian, Puerto Rican, Irish and Spanish descent.
They were raised with a strong culinary tradition and learned to connect to identity through food.
They are committed to feeding their communities good, simple food that utilizes local ingredients while never sacrificing quality or flavor.
You’ll taste the passion and grandma’s guidance in the food @theitalianpeasant_
Ermen is also a champion for our community garden.

Thank you for supporting the first experimental Lund pop-up Dinner with Friends on January 29, with Chef Ermen.
Ermen jumped in and went for it producing delicious family traditions, homemade pasta, red sauce, cannolis...
We learnt a lot serving 27 guests.
And Ermen, you’ll always be our first.
Carlo you helped craft the idea walking your dog Marcus with Johnny, your enthusiasm enabled an idea to come to life. Your salad and sous chefing saved the day.
Rayana & Roy said yes, Ermen said yes, and you all showed up ~ thank you to all who attended and made it a fun event.
It really was a pleasure, we worked well together opening up the Boardwalk after a long closure.
Fine-tuning as we go, may this be the first of many.
Here’s to many more dinners with friends.
